There are a couple of variables in the actual temp vs the displayed temp:

- the ECU and temp gauge use different sensors in slightly different positions;

- the MBE ECU calibration curve that Caterham uses is not 100% accurate and there is some resistance variation between sensors anyway, leading to up to about 10C possible variation, from my experience of trying to get an accurate calibration curve for the sensor my unlocked ECU uses.

With my car, the ECU and dash gauge agree at normal operating temps within 1C, I also have adjusted my fan set points to activate at 90C and deactivate at 85C, to match my 82C thermostat. To determine the ECU fan set points with an MBE ECU (normally 9A4 on a 420R), Easimap is needed.
