A friend in the industry said it's fine to sit with the fuel in there, but suggested filling the tank up so there's less room for condensation to form inside the tank from the temperature change over winter. Higher octane is a good option as stated above.
I've just kept it topped up and followed a lot of the advice above and never had any problems starting it or with it running on 'old' fuel.

I had a similar problem with some very light spots. The trick is not to let the blobs of water dry on the wings if possible. I wasn't brave/skilled enough to sand and add lacquer. As Stu and Scott said above, some heat helped (hairdryer if you don't have a heat gun) and then I had great results with the Wood Silk polish.
Had biblical rain on the way to a trackday at Brands Hatch and rain in the morning at the track as well. Even with leaving the water on the wings i didn't have any marks after that. Just needs to be applied every so often to keep it topped up.
