Yes, as long as you don't remove too much, alternatively you can use thin gauges to measure the clearances accurately, if that's the reason you want them refacing. The part of the rocker that you remove isn't in contact with the valve, it's either side of the worn part. I'm not sure if rockers actually wear, or are they indented due to the constant hitting of the valve stem, or a bit of both. Someone will know for sure. I've refaced rockers using a carborundum stone with no problems.

Alex,I wouldn't use a grinding wheel, (if that's what you mean by grinding back) as it would be a bit too harsh. I used a small oiled carborundum stone. That way it's easy to follow the shape of the curve. Didn't take long!
